Gluten free, dairy free
- 2 people
- 250 g pouch of steamed brown rice (or 80g dry weight)
- Half a red chilli, deseeded and diced
- Juice from half a lime
- 100 g hot smoked salmon, flaked
- 1 avocado, diced
- Half a cucumber, cut into ribbons
- 2 tbsp toasted pine nuts
Place the rice in a bowl and stir through the chilli and lime juice and season with a pinch of salt and freshly ground black pepper.
Add the salmon, avocado and cucumber and gently toss together. Sprinkle on the pine nuts.
