Ingredients
- 200g wholegrain flour
- 90g oats
- 2 ripe bananas
- 500ml milk of choice
- 100g cottage cheese
- 3 large eggs
- 3tbs flax seeds
Toppings
Yoghurt with Alflorex® Children sachet (optional) - Fresh berries
- Nuts and seeds
- Peanut butter
- Fruit compote
Instructions
Preheat oven to 180°C, line or grease a large baking tray or tin.
Blend wet ingredients in a blender: bananas, milk, cottage cheese, and eggs until smooth.
Combine dry ingredients in a large bowl: flour, oats, and flax seeds.
Stir your wet mixture into into dry until just combined, your batter should be thick but pourable.
If too stiff, add another splash of milk.
Pour and spread evenly into the pan.
Bake for 20–25 minutes, until golden and firm to touch.
Cool for 10 minutes before slicing into squares.
