Ingredients

  • 2 medium leeks, trimmed, washed and sliced
  • 1 small red onion, diced
  • 2 garlic cloves, peeled and chopped
  • 1 tbsp olive oil
  • 1 tsp butter
  • Half tsp of nutmeg
  • 400 g can chickpeas, drained and rinsed
  • 2 tbsp ground almonds
  • 800 ml vegetable stock
  • 50 g Parmesan, grated

Instructions

Heat the oil and butter in a large saucepan and add the leeks, onion and garlic and sauté gently for 5 minutes until soft.

Add the chickpeas and cook for a further minute, then add the ground almonds and stock and simmer for 15 minutes.

Season with a pinch of salt and freshly ground black pepper and add the Parmesan. Blitz with a stick blender, then reheat for a minute.
