Ingredients

  • 250 g pouch of steamed brown rice (or 80g dry weight)
  • Half a red chilli, deseeded and diced
  • Juice from half a lime
  • 100 g hot smoked salmon, flaked
  • 1 avocado, diced
  • Half a cucumber, cut into ribbons
  • 2 tbsp toasted pine nuts

Instructions

1.

Place the rice in a bowl and stir through the chilli and lime juice and season with a pinch of salt and freshly ground black pepper.

2.

Add the salmon, avocado and cucumber and gently toss together. Sprinkle on the pine nuts.
