Makes 8-10 slices

Ingredients

  • 250 g wholemeal spelt flour 
  • 175 g butter 
  • 1 tsp mixed spice 
  • 1 tsp baking powder 
  • 1 tsp bicarbonate of soda 
  • 2 apples, peeled and grated 
  • 2 eggs 
  • 200 g blackberries 

Instructions

Preheat the oven to 180C/gas 4. Butter and line the bottom of a loaf tin.   

2.

In a large bowl, rub the flour and butter together with your fingers to make fine crumbs. Gently stir in the mixed spice, baking powder and bicarbonate.  

3.

Whisk the eggs in a bowl and stir in the apples. Add to the flour mixture and lightly stir in being careful not to over mix.  

4.

Gently fold the berries with a metal spoon. Spoon into the tin and level off. Bake for 1¼ -1 hour 20 minutes. 

5.

Check with a skewer after 50 minutes and cover loosely with foil if it is browning too much.
